These heat diffuser/defroster plates have many uses.
It makes quick work of defrosting meats, and softening butter, and it helps with distributing heat on a stove reducing the chance of burning food.
Many cooks like to use copper because of its capabilities. It soaks up heat very quickly making it a good option for easy defrosting without using a microwave. It distributes heat well greatly reducing burnt food, it stays warm longer than other metals keeping warm after the heat source is removed, and it even requires less power or flame because there is less heat lost into the air.
These plates are different shapes for aesthetics and in some cases to minimize heat loss from exposed corners like on square copper diffusers.
Since the octagon shape hides under pans better it results in less hot exposed metal, reducing the chance of burns.

PLEASE NOTE: Copper and brass tarnishes very easily, and only needs time, and contact with the air to do so. I can not guarantee that the piece you receive will be EXACTLY the same color as the pictures. It will likely be very close though.
After high heat use all copper plates will tarnish causing some color change. This will not effect the functionality of the plates but if one desires the tarnish to be removed, simply use a scour pad and scuff off the surface until desired finish is achieved. (Lemon juice will speed up this process) Make sure to wash the plate thoroughly and dry immediately. Water will also tarnish the surface if left on the plate for too long.
